Wednesday Recipe - Baked French Toast

I haven't had breakfast yet, can you tell from the recipe selection?  May make this one again this weekend.  I love the aroma wafting through the house while it's in the over.  And I have no problem eating my share once it comes out.  If I make it when the granddarlings are here, there are no leftovers.  When it's just the Honey & me, then I can freeze the leftovers and have for another weekend breakfast!  Yummm.

Baked Apple French Toast
Ingredients:
1 stick (1/2 cup) butter (1/4 pound)
1/2 cup brown sugar
3 to 5 large Granny Smith apples, peeled and sliced
8 ounces cream cheese
1/2 cup dried cranberries
12 slices of firm bread, cut into cubes
8 eggs
4 cups milk
2 Tablespoons vanilla
Cinnamon sugar
In a skillet, melt butter with sugar. Add apples and cook 2 to 3 minutes. Transfer apples to a baking dish (13 x 9 inches or larger, I use a slightly larger pan so that it doesn't bubble over). Cut the cream cheese into cubes and arrange over the apples, then sprinkle with dried cranberries. Top evenly with the bread cubes. Beat eggs, milk, and vanilla together and pour over the bread. Sprinkle with cinnamon sugar; put in refrigerator overnight.
Bake at 350 degrees uncovered for 50 to 60 minutes (may vary slightly with the oven). Let stand 15 minutes before serving. Sprinkle with powdered sugar and serve with maple syrup.
