Day 3 14 Days of Love - Chocolate Diva Dishes on Her Past

It's that time of month when we get a visit from the Chocolate Diva.  Today she shares some of her past memories and a recipe for one of my favorite desserts...yes, even with my efforts to eat healthy I'm falling off the wagon for this one...after all, it's CHOCOLATE and that's good for you, right!
And make sure to leave a comment to get entered into the drawing for a yummy chocolate prize that she'll pull out of her hat along with the winner's name!!!!
Now for the....Chocolate Diva
One could fall in love many times during the course of a lifetime, but the first rush of love always holds a special place in our hearts. My first love was Andy. I was 18, he was 23 and how we met was a little unique.
My girlfriends and I had a big celebration after high school graduation. We didn’t want they typical graduation party that everyone else was doing – we had something special planned. First we rented a hotel room at the Holiday Inn Downtown Denver. We then went out for a “fancy” dinner at the Fisherman’s Cove, where we all had our first bites of escargot.
Some of you, will remember “cruising” downtown Denver. Well after dinner, we did it in style that evening with a rented limousine. The Limo driver was a handsome man with a bright wit and beautiful eyes. Welcome Andy. After we finished our cruising, the girls had a party in our hotel room. Andy and I, instead walked the halls of the Holiday Inn for hours – talking, laughing and finally kissing! My first love!
The other fun thing that I remember to this day was the dessert at the Fisherman’s Cover. Chocolate Mousse! It was my first time stepping way from Jell-O Chocolate Pudding and making the leap to the real world of desserts!
Enjoy!

Chocolate Mousse

Ingredients
  • 8 (1 ounce) squares semisweet chocolate, coarsely chopped
  • 1/2 cup water, divided
  • 2 tablespoons butter (no substitutes)
  • 3 egg yolks
  • 2 tablespoons sugar
  • 1 1/4 cups whipping cream, whipped
Directions
1. In a microwave or double boiler, heat chocolate, 1/4 cup water and butter until the chocolate and butter are melted. Cool for 10 minutes. In a small heavy saucepan, whisk egg yolks, sugar and remaining water. Cook and stir over low heat until mixture reaches 160 degrees F, about 1-2 minutes. Remove from the heat; whisk in chocolate mixture. Set saucepan in ice and stir until cooled, about 5-10 minutes. Fold in whipped cream. Spoon into dessert dishes. Refrigerate for 4 hours or overnight.
